Mimosa Sandwich with GIA Anchovy

Ingredients for 4:

Wholemeal bread 8 slices
4 eggs
GIA Anchovy Paste 40 g
Mayonnaise 80 g
Fresh spinach 30 g.

Preparation

Mash the previously boiled eggs in salted water for 7 minutes with a fork, add half of the GIA Anchovy Paste, salt, pepper, oil, and mix. Mix the mayonnaise with the remaining GIA Anchovy Paste. Spread a layer of mayonnaise on a slice of bread, add the eggs and spinach, and close with another slice of bread.
